Letter of Invitation

The organising committee of the 7^th International Hydrocolloids Conference would like to take this opportunity to invite the members of the scientific and industrial community interested in research and applications of hydrocolloids to Melbourne in August 2004. Following the conference there will be a satellite workshop held at Food Science Australia on applications based research.

The 7^th International Hydrocolloids Conference will be an opportunity to hear presentations on the latest highlights of research in the field with special emphasis on 21^st century applications. Presentations at the 7^th International Hydrocolloids Conference will focus on recent advances in the fundamental science of polysaccharides and proteins as related to food, pharmaceutical, cosmetic, material and medical applications.

The Conference venue is located in the city of Melbourne in close proximity to a range of cultural venues. Melbourne is a multicultural city of some 3 million inhabitants offering a quality lifestyle. It is ranked as one of the world's most liveable cities.
