PROF DAVID BOGER David Boger is Laureate Professor and Director of the Particulate Fluids Processing Centre (a Special Research Centre of the Australian Research Council) at The University of Melbourne. His research is in non-Newtonian fluid mechanics with interests ranging from basic polymer and particulate fluid mechanics to applications in the minerals, coal, oil, food and polymer industries. Professor Boger has received numerous awards including the Victoria Prize in 2002, in recognition of his research achievements.PROF FRANK CARUSO Frank Caruso is a Professor and Federation Fellow in the Department of Chemical and Biomolecular Engineering at the University of Melbourne. He previously led an international research group at the Max Planck Institute of Colloids and Interfaces in Germany. He has been awarded numerous prizes for his scientific achievements including most recently: Royal Australian Chemical Institute Rennie Memorial Medal/Royal Society of Chemistry - Royal Australian Chemical Institute Exchange Medal (2000/2001); ARC Federation Fellowship (2001). He serves on the International Advisory Boards of the journals Advanced "Functional Materials" and "Chemistry of Materials". His main interests are in combining recent new developments in bioscience with those in nanotechnology, in order to produce novel biofunctional materials for potential applications in medical diagnostics, pharmaceutics and catalysis. PROF DOUGLAS DALGLEISH Douglas Dalgleish holds the Ontario Dairy Council Research Chair at the University of Guelph, Canada. A native of Scotland, he has over 30 years experience in Dairy Foods research, in government laboratories, academia and industry in the UK, USA, Canada and France, and has published over 200 research papers. PROF ALLEN FOEGEDING Allen Foegeding is a William Neal Reynolds Distinguished Professor of Food Science in the Department of Food Science at North Carolina State University, USA. Dr. Foegeding conducts research in the area of protein functionality and polymer and colloidal properties of food products, with emphasis on Dairy Products. PROF KATSUYOSHI NISHINARI Katsuyoshi Nishinari obtained his PhD in Pure and Applied Sciences at the University of Tokyo in 1971. From 1971 to 1992 Prof Nishinari worked as a researcher for the National Food Research Institute. He was appointed to his current position as Professor at Osaka City University where he has been for the past eleven years. He has been the visiting Professor Colloid and Polymer Group, NEWI between 1980 and 1990, and Thermal Physics, ESPCI from 1999 until 2001. Professor Nishinari's scientific interest is Gel-sol transition & Food texture. He has edited 7 books and published 8 chapters in monographs, 250 original papers and 80 review papers. PROF IAN NORTON Ian Norton is chief scientist for Foods at Unilever plc based at the Colworth Laboratory in the UK. The research group at Colworth has 40 years of continuous polysaccharide research. Professor Norton's research experience ranges from physical chemical studies of single polysaccharides, through ionic and solvent effects to mixed biopolymer systems He has applied his research to many Unilever products ranging from spreads to sauces to ice cream to deodorants to shampoos and to skin creams. PROF GLYN PHILLIPS Phillips is currently Chairman of Phillips Hydrocolloid Research Ltd., the Cellucon and Hydrocolloid Trusts and the Wrexham Gums and Stabilisers Conferences. He is a Professorial Fellow at the North East Wales Institute and a Consultant to several industrial organisations, including to the Association for the International Promotion of Gums. Professor Phillips is editor of the journal "Food Hydrocolloids", and has produced 42 books and 516 papers in leading scientific journals. PROF SIMON ROSS-MURPHY Simon Ross-Murphy is Professor, Department of Life Sciences, King's College London and the University of London. Professor Ross-Murphy is editorial board member of "Polymer", "Carbohydrate Polymers", "Food Hydrocolloids" and was previously editor "Polymer Gels and Networks" from 1991-1997. Professor Ross-Murphy's current research interests include structure property relations of bio and synthetic polymers; gels and gelation and soft materials science. DR DAVID TOPPING David Topping is Program Leader for the Gastrointestinal Health and Colon Cancer Program, CSIRO Health Sciences and Nutrition. He is a Fellow of the Academy of Technological Sciences and Engineering and is a past President of the Nutrition Society of Australia. He is interested in the relationships between diet and prevention of the chronic diseases which contribute substantially to the national health bill.
